I received a notification that the ham should ship within a 6 day window. As I was going to be out of town, I asked a friend to check each evening to see if it had arrived. A phone message was left the night before the scheduled delivery indicating it would arrive between 8 a.m. and 7 p.m. the next day, a Friday, that someone must be present to receive it, but after one delivery attempt it could be left without a signature if authorized. I didn't get this message until midday Friday, after delivery had been attempted, so I had the friend put a note on the door to leave it on the porch which UPS did on Monday. FORTUNATELY, no animals came by to help themselves. The company needs to clarify what customers can expect re: delivery and warn people that they're expected to be at home for 11 hours the day after they receive the phone call.

This is contrast to the Jamn, which is the back leg of the Ibrico de Bellota pig. We have the paletas earlier because their smaller size takes less time to cure. Each week a local company slices our paletas by hand so we can ensure the thinnest, most delectable slices. Serve at room temperature with crusty bread and a fine wine. You will be able to see that it is truly 'bellota' by the way the mono-unsaturated fat glistens on each slice of ham. Iberico de Bellota comes from Iberico pigs that range freely across southwestern Spain, consuming huge amounts of acorns ('bellotas' in Spanish). This wonderful combination of diet and exercise, along with expert dry-curing, creates what many connoisseurs call the finest (and healthiest) ham in the world. The paleta bellota is carefully cured by Embutidos y Jamones Fermn in the medieval mountain village of La Alberca, creating an intense, complex flavor. While Paleta is not the highest pinacle of Iberico ham, a place reserved only for the whole Jamn Iberico de Bellota, its taste is as close as you can get! Until now only a select few have been able to enjoy Spains most famous cured meat. The choice has been to order a whole Ibrico Bellota Ham , or be fortunate enough to live near a gourmet butcher where they slice Iberico by the pound. Now you can have it delivered it to your door.

There are several types of hams varying in quality.
Ham and water product is the lowest, followed by ham with water added, ham in natural juices and then the top of the line HAM.
North Country makes awesome hams. We've purchased them many times and the flavor is great. Nicely trimmed and no added juices or water. So you are only paying for a ham. If you want a great ham at a fair price, try them.
