Cast Iron is a thing of the past, newer technology in stainless steel have all the benefits of using a large "hunk of iron" with none of the drawacks.

I used one of these skillets for a little while before taking cooking classes. In the classes I learned from professional chefs that wouldn't touch one of these with a 6 foot wooden spoon. They require constant upkeep and cleaning, you can't scrub them for fear of taking off the seasoning, but you can't use them without cleaning.

Would you lick the surface of this pan? No? Why not? Doesn't taste too good? Hmmm, why are you cooking with it then?

How can you tell against a black surface if you are burning your food? Want that perfect golden brown without getting black? You'll have a hard time with this pan because you can't see if you are too hot in temperature because burning food looks like the pan.

Go Stainless Steel, Fissler, Cuisinart, Calphalon. Always pre-heat your stainless pans before use!

Griddle does all it should with no fuss. I've always wanted one of these; so now there are a lot more pancakes and eggs eaten around here. The griddle is a bit heavy, but distributes and maintains heat very well. Delivery was prompt and I am a satisfied customer.

this little sleeve fits perfectly over the handle of my cast iron skillet. because it completely fits the handle i don't have to worry about burning my hand on exposed areas on a very hot skillet coming out of a 400 plus degree oven. i even leave the cover on the handle while it is in use in the oven and the pad is a little hot but not burning blister hot .
