Not only does Cousins understand how to create satisfying meals to aid her clients, but she also understands what nutrients are needed when needing to eliminate foods from your diet. In her introduction, Cousins describes some of the cases she worked on. These stories help people to connect and relate to someone in a similar situation. She includes how their condition improved once they eliminated certain foods from their diet. Some of the delicious recipes inside this book are: Spinach, Potato and Celery Soup, Country Apple Cake, Tropical Chicken Salad and Marinated Tofu and Peanut Salad. There were no photographs or illustrations in this book. Yet, the recipes are not complicated enough to need any of the above. As with any elimination diet, there are new foods to eat. So, there may be ingredients a reader is not familiar with like soy yogurt. Most of these ingredients can be found in a natural food store, in the health food section of your grocery store, or at one of the online retailers in the back of the book.
